DIY Firecracker Popsicles

Making popsicles is way harder and messier than it looks. Wait a minute, I should probably clarify that — if you are attempting to make tri-colored popsicles, it’s much harder and messier than it looks!

One color works just fine.

But I’ve been dying to make my own version of store-bought Firecracker Pops, and thought it would be fun to turn this childhood favorite into a healthier alternative.

While the DIY Firecracker Popsicles ended up being super cute, they were also quite, shall we say, involved. I was honestly ready to throw in the towel and declare I would never ever make these treats again, but then I tasted it. 

The concoction was a refreshingly sweet mixture of flavors, and both Joseph and I could not stop commenting about how good they were. I daresay this recipe is now officially on my once-a-year-to-make list in celebration of Summer, and our upcoming Independence Day!

How to Make DIY Firecracker Popsicles

Step 1: In a blender, combine strawberries, sugar, and lime juice, and puree until smooth, scraping down sides as needed. If you use frozen strawberries, make sure to let them thaw first, or you will be blending for quite a while. Just ask me how I know!

Step 2: Fill the ice-pop molds {I used this brand} 1/3 of the way full, being careful not to let the strawberry mixture splash up the sides. I personally think this is near impossible to do, since I tried most everything without much success.

Other than carefully spooning the mixture in, another thought is to try using a funnel. This semi-worked, but I still had to try and wipe away the excess mixture to get those clean lines I so wanted to achieve. I also tried a cake decorating bag and tip, but as soon as I spooned in the mixture, it seeped right through the other end. Gah!

Either way, just try to get it in there as best you can.

Step 3: After filling molds with strawberry mixture, use a long skewer {I used a chopstick} to smooth out the layers as you pour them in. I kept getting air bubbles that needed to be filled out before freezing. Then let pops freeze for about 30 minutes while you whip up the white layer.

Step 4: Whisk together yogurt, cream, sugar, and lime juice in a small bowl. Remove the molds from the freezer and top with yogurt mixture, filling another 1/3 full using the same methods I recommend above. Add popsicle sticks {you can get 100 of them at the dollar store} and freeze for about 30 minutes, or until firm.

Step 5: Clean your blender, then puree blueberries, sugar, and lime juice, scraping down the sides as needed. Remove molds from freezer and top with final layer, leaving 1/4 room from the top for popsicles to expand. Freeze until solid, about 3 hours.

Step 6: When serving, briefly run molds under hot water to release the pops.

Step 7: Eat quickly before they melt!

DIY Firecracker Popsicles


  • Total Time: 4 hours

Ingredients

For the Red Layer:

  • 2 cups halved, hulled strawberries {fresh or thawed from frozen}
  • 2 tbsp sugar
  • 1 1/2 tbsp lime juice

For the White Layer:

  • 3/4 cup plain yogurt
  • 4 1/2 tbsp heavy cream
  • 3 tbsp sugar
  • 3 tbsp lime juice

For the Blue Layer:

  • 2 cups blueberries {fresh or thawed from frozen}
  • 2 tbsp sugar
  • 1 1/2 tbsp lime juice

Instructions

  1. For the Red Layer: Combine strawberries, sugar, and lime juice in a blender. Puree until smooth, scraping down sides as needed. Fill ice-pop molds 1/3 of the way full. Freeze until firm, about 30 minutes.
  2. For the White Layer: Whisk together yogurt, cream, sugar, and lime juice in a small bowl. Remove molds from freezer and top with yogurt mixture, filling another 1/3 full. Insert popsicle sticks and freeze until firm, about 30 minutes.
  3. For the Blue Layer: Combine blueberries, sugar, and lime juice in a blender. Puree until smooth, scraping down sides as needed. Remove molds from freezer and top with blueberry mixture, leaving 1/4-inch free space from the top of the molds. Freeze until solid, 3 hours or up until 1 week.
  4. Before serving, briefly run molds under hot water to release the pops.

Total Cost: $5.31/batch or $.89/popsicle

For some reason, I had this idea that store-bought Firecracker Popsicles were really expensive, but I was able to find a box of 18 for just $2.99, making it $.17 per pop. Compare that to the $.89 price of these homemade ones, and you have quite a large difference!

However, it’s almost like comparing apples and oranges. Store-bought pops are basically just sugar water mixed with food dye, while these homemade treats are real fruit and taste SO much better!
